Today we’re sharing a recipe from our friend Meredith over at The Early Risers. These yummy carrot zucchini muffins have it all. As Meredith says, they are “Healthy and delicious… no refined sugar… toddler approved.” Not to mention, simple to make, with plenty of opportunities to involve the kids. Healthy and delicious… no refined sugar… toddler approved. You need to make these muffins, they are so tasty!
We had a zucchini in the refrigerator that needed to be used up so I came up with this muffin recipe. They are a great way to sneak in some extra veggies to your kiddos! They kind of taste like a mix between carrot cake and banana bread. I think the next time I use this recipe I will make it into a cake and add some frosting!

Makes: 12 Regular Sized Muffins
Ingredients:
- 1 cup whole wheat flour
- 1 cup ground oats, or oat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- Dash of salt
- 1 cup grated carrot
- 1 medium zucchini, grated (squeeze out any excess moisture)
- 1 medium ripe banana, mashed
- ½ cup maple syrup
- 2 eggs, beaten
- ¼ cup butter, melted
Directions:
1. Preheat oven to 350 degrees F. Grease regular sized muffin tray.
2. Combine dry ingredients into a medium bowl. Stir to combine.
3. Combine wet ingredients into a large bowl, stir until incorporated.
4. Add dry ingredients into large bowl with the wet ingredients, stir just until combined.
5. Divide the batter evenly between the 12 muffin cups.
6. Bake about 18-20 minutes or until a toothpick inserted comes out clean.
7. Store any uneaten muffins in the refrigerator for up to 4 days.

Ollie HQ tips:
Kids can help add in the ingredients and help to pour the batter into the muffin cups. If you’re using cupcake/muffin liners, have them place them in the pan while you get the ingredients ready.
