Who knew peppers could be so filling?!

Overview

Makes: 1 adult or 2 toddler portions
Difficulty: easy

Ingredients:

  • 1 bell pepper
  • 1/4 cup of long grain rice
  • 1 tbsp of any leftover ground meat or beans
  • A finely chopped onion
  • A tsp or two of any other vegetable 
of choice chopped up – tomatoes, mushrooms, corn, or anything that you fancy
  • A few olives or garnish to decorate

Method:

Boil up some rice following instructions on the packet. Once the rice is cooked, pour it into a large bowl. 
If you are using onion, sauté it gently 
in a pan using a very small amount of vegetable oil until it is soft and sweet. Add the other vegetables and stir fry for a couple of minutes until soft. Mix your vegetables or other fillings with the rice. 
Slice the pepper in half lengthwise, or chop off the very top, and fill with the mixed rice. 
Cover the peppers with foil and bake in a hot oven for 10 – 15 minutes.

Neat cheats

If you’re really short on time you can buy ready-flavored microwaveable rice.

You can also make extra rice stuffing and use as a side dish with salad – hot or cold.

Make it together!

Children can help by mixing the vegetables with the rice and spooning the cooled filling into the peppers. An example toddler portion for this would be 2 – 3 tbsp of cooked rice, 1/4 bell pepper and 1 – 2 tbsp of beans.
