Liven up your ordinary scrambled eggs with some cheese and salsa, and get help from the kids to wrap it all up.
Overview
Makes: 2 adult or 4 toddler portions
Difficulty: easy
Ingredients:
Tomato salsa
- 1 tsp of olive oil
- 2 large tomatoes, finely diced
- 6 spring onions, thinly sliced
- Half small red chilli, finely diced
- 1 tsp sugar
- Juice of half a lime or lemon
- Half tsp of balsamic vinegar or wine vinegar
Scrambled eggs
- 1 tsp of vegetable oil
- 4 eggs
- 3 tbsp milk
- 2 small tortilla wraps
- 1/4 cup parmesan or cheddar cheese, grated
Method:
Preparing the Salsa:
To make the salsa, mix all of the ingredients together in a bowl. Season well and chill while you make the scrambled eggs.
Scrambling Eggs:
Beat the eggs with the milk and season. Add the oil in a small frying pan.
Add the egg mixture to the pan and stir over the heat until the eggs are scrambled and thoroughly cooked through.
Wrap it up!
Warm the wraps in the microwave or in a dry frying pan. Put one wrap on a board and spoon half of the eggs along one side. Top with the salsa and a sprinkle of cheese, fold in the sides, then roll up and slice in half.
Repeat with the remaining wrap. Cut in half and serve.
Neat Cheats
You can buy ready-made salsa if you don’t have time to make your own, but keep an eye on the salt and sugar levels.
Make it Together!
Children will love to help add the fillings and then fold up the wraps. An example toddler portion for this would be scrambled egg from 1 egg, 2 cherry tomatoes, 1 small slice of toast, 1 tsp of spread and 3 ounces diluted juice.
