At Ollie Club HQ, this is voted as one of our savory favorites to eat! Get the whole family involved by each making up your own individual fajitas.

Main Ingredients:

  • 4 – chicken breasts cubed or your choice of protein
  • 8 – flour tortillas
  • 1 – red onion, sliced
  • 2 – sweet peppers, sliced
  • 1 tbsp. – olive oil
  • Fajita seasoning or 1 tsp. smoked paprika
  • Pinch ground cumin (optional)

Topping Ingredients:

  • Sour cream or plain yogurt
  • Shredded cheddar cheese
  • Chopped tomatoes  
  • Guacamole (easy to find at the store, but easy to make at home with kids! Mash 3 avocados, ½ small red onion sliced, 1 finely chopped red chili, a handful of chopped cilantro, 2 squeezed limes)
  • Salsa (if you want to make at home, chop 15 cherry tomatoes, a small bunch of cilantro, squeezed lime, salt, pepper)  

Foil wrap the tortillas, pop in the oven to warm at 350 degrees or microwave as per instructions.

To get started put the pan on medium heat, then with the ½ red onion, peel, halve and finely slice. Pepper next – cut and deseed pepper, cut into thin strips.

In a bowl, add onion and peppers, add paprika and cumin in a bowl, and chicken. Then add 2 squeezed  limes, drizzle of olive oil, season with salt and pepper and mix well. Spoon into a preheated pan and cook for 8-10 minutes until chicken is cooked through.

Prepare and put toppings in bowls on the table. Get kids to help with this part!

Get the kids to help set the table and get ready for your Mexican treat. Everyone gets a tortilla and filling! Have your kids help spoon out toppings, and challenge kids to have a dollop, even a very little dollop, of something new on the side of their plate.

Show them the art of fajita rolling – make the tortilla into a sausage shape, tucking the bottom in, without any falling out. It’s harder than it sounds – who has the cleanest plate at the end?!
