This quiche is packed-full of veggies, calcium, protein and of course, cheese! Because what’s better than cheese??

Overview

Makes: 2 adult or 4 toddler portions
Difficulty: easy

Ingredients:

  • 3 eggs
  • 1/2 cup of cottage cheese
  • 1/2 onion, chopped
  • 1/2 cup of cheddar cheese, grated
  • 1/2 packet of spinach or kale
  • 1 cup of mushrooms
  • 2 tsp of vegetable oil
  • 1 tsp nutmeg

Method:

Pre-heat your oven to 390°F. Beat the eggs in a mixing bowl, add the nutmeg and cheese then set aside.

In a pan, sauté the onion and mushrooms until light brown. Add the spinach or kale and cook until it has wilted. Drain out any excess oil from the pan and pat dry with a paper towel if necessary. With a spoon, fill a muffin tin (halfway) with the vegetable mixture. Next, evenly disperse the egg mixture throughout the tins. Sprinkle some grated cheddar over the top.

Bake for 30 minutes. Let it cool and serve with some salad, breadsticks or baked beans.

Neat cheats

There is no need to pre-cook the vegetables. Try using tinned instead if you want a really quick dish.

Make it together!

Peeling mushrooms is fun for small children. They can help decorate the top of the quiche with slices of tomato or mushroom and can sprinkle cheese on top before it goes in the oven. An example toddler portion for this would be 
1/2 – 1 1/2 small slices (1/4 – 3/4 cup).
