Ollie Superpower Energy Bites

Makes about twenty 1” bites

1 cup (115g) Rolled Oats- quick cooking

½ cup (55g) Ground Flax Seeds

1/3-1/2 cup Dried Cranberries- sweetened w/ apple juice

½ cup Peanut butter (no added oil) – crunchy or smooth

1-2 Tbsp Honey

2-3 Tbsp Filtered Water or Coconut Oil- optional

Method:

In a bowl, combine all the dry ingredients and mix well. Then add the peanut butter and honey. Mix until everything is evenly coated. If the mix is a bit dry, you can add a little more peanut butter, filtered water or coconut oil- about 1 Tbsp at a time. The batter should be somewhat wet, easy to form into balls.

With a medium sized spoon, scoop out a little bit of mixture and roll in your hands to form a ball. Store in an airtight container in the fridge for up to 7-10 days.

Super Savers

This recipe is very versatile. You can make it with a variety of ingredients. Mix up the nut butters or add in some hemp hearts for some extra healthy fats. You can swap the honey for dried fruit (sulphite free) so they are safe for all ages.
